COMBINE RAWA , CURD, CHILLIES, SAUTEED CARROT, 1 TBSP OIL, SALT AND 1.5 CUPS WATER. WHISK WELL. COVER AND KEEP FOR 30-40 MINUTES. GREASE A SMALL THALI WITH OIL. JUST BEFORE STEAMING THE DHOKLA, ADD SODA AND GENTLY MIX. POUR THE BATTER IN THE GREASED THALI AND SHAKE TO DISTRIBUTE EVENLY.
TAKE A BIG STEEL VESSEL AND FILL HALF WITH WATER. PUT THIS THALI ON IT AND COVER WITH A LID. PUT ON HIGH FLAME. IT WILL GET STEAMED IN 10-15 MINUTES.
ONCE DONE, COOL FOR A WHILE. THEN TAKE GHEE, TEMPER WITH MUSTARD, CUMIN AND POUR ON THE DHOKLAS. ADD CHOPPED CORIANDER. CUT INTO SQUARES AND SERVE WITH HOMEMADE GREEN CHUTNEY.
SPREAD WELL USING A GREASED SPATULA, SPRINKLE NUTS, PRESS LIGHTLY. NOW KEEP THIS PLATE IN THE REFRIGERATOR FPR 2 HOURS. REMOVE, GIVE SHAPE WITH A CIRCULAR MOULD AND ENJOY !
